- 2 small zucchini
- 2 small yellow squash
- 1 small red pepper
- 1 small green pepper
- 2 cans mushroom stems and pieces
- salt, pepper and garlic powder to taste
- Parmesan cheese
- olive oil (to lightly cover veggies)
Directions

1Cut squash and zucchini into small chunks, about 1/2-inch. Dice peppers.

2Drain mushrooms.

3Mix all veggies together in olive oil.

4Place veggie mix in baker and bake for about 45 minutes at 350° until veggies are tender.

5Cool 5 minutes before serving. Sprinkle on some Parmesan cheese.
