  • 2 small zucchini
  • 2 small yellow squash
  • 1 small red pepper
  • 1 small green pepper
  • 2 cans mushroom stems and pieces
  • salt, pepper and garlic powder to taste
  • Parmesan cheese
  • olive oil (to lightly cover veggies)

Directions

    Cut squash and zucchini into small chunks, about 1/2-inch. Dice peppers.

    Drain mushrooms.

    Mix all veggies together in olive oil.
  4. 4
    Place veggie mix in baker and bake for about 45 minutes at 350° until veggies are tender.

    Cool 5 minutes before serving. Sprinkle on some Parmesan cheese.
