- 1/3 c. margarine, melted
- 1 egg
- 2 tsp. water
- 1/2 c. all-purpose flour
- 1/2 tsp. salt
- 2 c. fresh vegetables (broccoli flowerets or cauliflowerets, carrot slices, zucchini slices and green or red pepper strips)
Directions

1Heat the oven to 450°.

2Brush bottom of rectangular pan, 13 x 9 x 2-inches with about 1 tablespoon of the melted margarine.

3Beat egg and water with a fork in a shallow dish.

4Mix flour and salt in another shallow dish.

5Dip about 1/4 of the vegetables into egg mixture.

6Remove 1 vegetable piece at a time with a slotted spoon, fork or hands; roll in flour mixture to coat.

7Place in pan. Repeat with remaining vegetables.

8Pour remaining margarine carefully over each vegetable piece.

9Bake, uncovered, turning once, until crisp-tender and golden brown, 10 to 12 minutes. Sprinkle Parmesan cheese.
