  • 8 zucchini, washed and sliced
  • 1/2 c. fresh mushrooms, sliced
  • small green pepper, diced
  • 1 Tbsp. onion flakes
  • salt and pepper to taste
  • Italian mixed seasoning, sprinkle lightly
  • 1 1/2 oz. Cheddar cheese
  • 1 oz. bread, toasted and crumbled
  • 2 oz. skim milk

Directions

    In casserole dish, layer zucchini, mushrooms, green pepper and onions.

    Sprinkle with seasonings.

    Add cheese and bread crumbs. Pour milk over top.

    Bake at 350° for 30 minutes.

    Equals lunch protein plus 1 ounce bread and 2 ounces milk.
