- 1 (16 oz.) can diced tomatoes
- 1 (16 oz.) can red kidney beans
- 1 small cooking onion, chopped
- 1/2 c. finely chopped carrot
- 1/4 c. finely chopped green pepper
- 1/4 c. white rice
- 1/4 tsp. cumin or to taste
- 2 Tbsp. dried parsley or to taste
- 2 Tbsp. chili powder or to taste
- 2 tsp. garlic salt or chopped garlic cloves or to taste
- 1 Tbsp. cocoa powder
- any veggie you like: corn, cauliflowerets, etc.
- 2 Tbsp. tomato paste (add for thicker chili)

1Saute onion, garlic and veggies until soft in 1/4 cup olive oil in a 2-quart pot on medium heat.

2Add remaining ingredients with enough water to cover, plus 1-inch more.
