Ingredients

  • 1 (16 oz.) can diced tomatoes
  • 1 (16 oz.) can red kidney beans
  • 1 small cooking onion, chopped
  • 1/2 c. finely chopped carrot
  • 1/4 c. finely chopped green pepper
  • 1/4 c. white rice
  • 1/4 tsp. cumin or to taste
  • 2 Tbsp. dried parsley or to taste
  • 2 Tbsp. chili powder or to taste
  • 2 tsp. garlic salt or chopped garlic cloves or to taste
  • 1 Tbsp. cocoa powder
  • any veggie you like: corn, cauliflowerets, etc.
  • 2 Tbsp. tomato paste (add for thicker chili)

Directions

    Saute onion, garlic and veggies until soft in 1/4 cup olive oil in a 2-quart pot on medium heat.

    Add remaining ingredients with enough water to cover, plus 1-inch more.
