Ingredients

  • 2 tsp. canola oil
  • 1 medium onion, chopped
  • 1/2 green pepper, chopped
  • 2 c. chopped zucchini
  • 1 can chili beans
  • 1 can diced tomatoes
  • 1 large can diced tomatoes (with juice)
  • 1 can tomato sauce
  • 2 Tbsp. chili powder
  • 1 tsp. basil
  • 1 tsp. oregano
  • 2 tsp. black pepper
  • 2 c. water

Directions

    Saute onion, green pepper and zucchini in oil in medium stock pan until tender. Add beans, tomatoes and tomato sauce.

    Mix well. Add spices.

    Mix well again.

    Add water.

    Bring mixture to a boil. Reduce heat and simmer for 35 to 40 minutes.

    Serve topped with low-fat sharp Cheddar cheese.

    Makes about 8 to 10 (1 cup) servings.
