Ingredients
- 2 tsp. canola oil
- 1 medium onion, chopped
- 1/2 green pepper, chopped
- 2 c. chopped zucchini
- 1 can chili beans
- 1 can diced tomatoes
- 1 large can diced tomatoes (with juice)
- 1 can tomato sauce
- 2 Tbsp. chili powder
- 1 tsp. basil
- 1 tsp. oregano
- 2 tsp. black pepper
- 2 c. water
Directions

1Saute onion, green pepper and zucchini in oil in medium stock pan until tender. Add beans, tomatoes and tomato sauce.

2Mix well. Add spices.

3Mix well again.

4Add water.

5Bring mixture to a boil. Reduce heat and simmer for 35 to 40 minutes.

6Serve topped with low-fat sharp Cheddar cheese.

7Makes about 8 to 10 (1 cup) servings.
