- 1 bell pepper, sliced
- 2 zucchini, chopped
- 1 cup spinach, chopped
- 4 eggs, beaten
- 1 12 cups skim milk (I used 1 % milk)
- 12 teaspoon oregano, dried
- 12 teaspoon thyme, dried
- 2 tablespoons parsley, chopped
Directions

1Spray skillet with Pam and heat over medium heat.

2Add vegetables (pepper - spinach) and cook until tender.

3In a small bowl combine reminder of the ingredients (eggs - parsley).

4Add mixture to skillet, stirring to combine.

5Reduce heat and cook until eggs are done and firm.

6Place skillet under preheated broiler and cook until browned.
