  • 1 bell pepper, sliced
  • 2 zucchini, chopped
  • 1 cup spinach, chopped
  • 4 eggs, beaten
  • 1 12 cups skim milk (I used 1 % milk)
  • 12 teaspoon oregano, dried
  • 12 teaspoon thyme, dried
  • 2 tablespoons parsley, chopped

Directions

    Spray skillet with Pam and heat over medium heat.

    Add vegetables (pepper - spinach) and cook until tender.

    In a small bowl combine reminder of the ingredients (eggs - parsley).

    Add mixture to skillet, stirring to combine.

    Reduce heat and cook until eggs are done and firm.

    Place skillet under preheated broiler and cook until browned.
