Veggie Grain Bowl

Ingredients
- 1/3 cup frozen corn (unthawed)
- 1/3 cup quinoa, cooked
- 1 small tomatoes, chopped
- 1 tablespoon onion, chopped
- 1/2 lemon, juice of
- 1 1/2 tablespoons olive oil
- salt
- pepper
- 1 cup kale, raw, finely chopped (or other leafy vegetable)
- 1/4 cup hummus
Directions

1Layer all ingredients in a container in order as written above.

2Be sure NOT to pour lemon juice and olive oil over the kale, as the kale will become soggy and the lunch won't last as long.

3By lunch time, the corn should be defrosted.

4You may dump all contents into another bowl before eating in order to mix the ingredients. I prefer to eat it out of the container cutting through all the layers to get a taste of everything.
