  • 8 slices whole wheat toast
  • 4 -6 tablespoons cream cheese
  • 2 -3 tablespoons kalamata olives
  • 1 large garlic clove
  • 12 tablespoon olive oil
  • 2 teaspoons pesto sauce (store bought is fine)
  • 1 red bell pepper, quartered
  • 1 red onion, sliced
  • 1 -2 zucchini, thinly sliced
  • 1 cup mozzarella cheese (or other cheese of your choice)
  • cooking spray

Directions

    Grill veggies on preheated grill coated with cooking spray.

    In food processor combine olives, garlic, pesto sauce, olive oil.

    It can be as smooth or chunky as you like.

    Spread 4 pieces of bread with cream cheese and top with olive spread.

    Top the olive spread with the grilled veggies, cheese and second piece of bread.

    Grill sandwiches till bread is golden and cheese is melted.
