  • 1 whole Onion, Diced
  • 2 whole Carrots, Diced
  • 1 Tablespoon Olive Oil
  • 1 pound Pasta (penne, Rotini, Or Shape Of Your Choice)
  • 1 clove Garlic, Minced
  • 1 can (28 Oz. Size) Diced Or Crushed Tomatoes
  • 1 can (8 Oz. Size) Tomato Sauce
  • 2 cups Shredded Mozzarella Cheese, Divided

Directions

    Preheat oven to 375 degrees F.

    In a saucepan, saute onions and carrots in olive oil until softened, about 10 minutes.

    As vegetables are sauteing, prepare the pasta according to directions.

    Add garlic to vegetable mixture and cook for another minute.

    Pour in tomatoes and tomato sauce and heat through (about 5 minutes).

    If you are trying to hide the vegetables, use an immersion blender to puree (or pour small batches into a blender and blend smooth).

    Drain pasta.

    Spray a casserole pan lightly with oil.

    Combine pasta and vegetables and pour into casserole pan.

    Mix 1 cup of mozzarella into mixture.

    Top with additional mozzarella cheese.

    Bake covered for 30 minutes or until cheese is melted.
