- 2 or 3 yellow squash, sliced
- 1 green pepper
- 1 c. broccoli florets
- 1 large onion, sliced
- 1 c. sliced mushrooms
- 2 Tbsp. butter or margarine
- 2 to 3 Tbsp. soy sauce or teriyaki sauce
- 1/4 c. dry white wine
- 1/4 tsp. crumbled dried tarragon (optional)
- shredded or sliced Swiss or Monterey Jack cheese
Directions

1Melt butter in large frying pan; add vegetables.

2Dot with more butter.

3Sprinkle with soy or teriyaki sauce and wine.

4Cover; cook, stirring occasionally, over medium heat until vegetables are tender.

5Stir once more.

6Top with cheese; cover and cook until cheese is melted.

7Makes a nice light entree or serve with rice or couscous.
