Vegtable Paella

Ingredients

  • 1/4 cup of olive oil
  • 1 small onion, chopped finely
  • 2 pressed garlic cloves
  • 3 sliced tomatoes
  • 1 cup of rice (basmati or any long grained)
  • pinch of saffron
  • 1 red and 1 yellow bell pepper cut into pieces
  • 2 handfuls of thawed, frozen peas (not canned)
  • 2 handfuls of cut, fresh green beans
  • 1/2 cup of cut broccoli
  • 1 cup of vegetable stock
  • salt, chopped parsley, a bit of lemon juice

Directions

    In paella dish or shallow skillet add the oil, heat up, add chopped onion and garlic. When they are sauteed add bell peppers, tomatoes,green beans, broccoli, saute a bit longer, add the rice, vegetable stock, and pinch of saffron and salt. Cook for approximately 15 minutes, rice should not be overcooked. There should be still a bit of liquid.

    At the last moment add peas, parsley and squeeze of lemon
