Venison Chili

Ingredients

  • 4 onions (large), finely chopped
  • 2 garlic cloves, finely chopped
  • 1/2 c. oil
  • 2 lb. venison, ground
  • 2 Tbsp. chili powder
  • 1 tsp. coriander, ground
  • 1/2 tsp. cumin, ground
  • dash of Tabasco sauce
  • 1 c. beer
  • 1/2 c. tomato paste
  • 1 1/2 tsp. salt

Directions

    Saute onions and garlic in oil until colored.

    Add venison and rest of ingredients.

    Blend.

    Simmer for 45 minutes to 1 hour.

    Add more beer if it gets too dry.

    Cook until it is well thickened and rich in flavor.

    Serve with pinto or kidney beans and rice.
