Venison Chili

Ingredients

  • 5 c. canned tomatoes
  • 1 1/2 lb. onions, chopped
  • 1 lb. green pepper, chopped
  • 2 cloves garlic, crushed
  • 1/2 c. parsley, chopped
  • 1/2 c. butter
  • 1 lb. ground lean pork
  • 2 1/2 lb. deer meat, ground for chili
  • 1/2 c. chili powder or to taste
  • 2 (15 oz.) cans red beans with juice
  • 2 Tbsp. salt
  • 1 1/2 tsp. cumin seed
  • 1 1/2 tsp. pepper
  • 1 1/2 Tbsp. oil

Directions

    Simmer tomatoes 5 minutes in their own juices.

    Add onions, green peppers and cook until tender, stirring often.

    Add garlic and parsley.

    Melt butter in a large skillet and saute meat for 15 minutes.

    Add meat to tomato mixture; stir in chili powder and cook 10 minutes.

    Add beans and spices and water, if needed. Simmer covered 1 hour.

    Cook uncovered for 30 minutes.

    Serves 8 to 10.
