Very Berry Chutney

Ingredients

  • 1 cup fresh blackberries
  • 1 cup fresh strawberries
  • 1 medium red onion
  • 2 tablespoons chia seeds
  • 1/3 cup strawberry/blackberry jam
  • 2 tablespoon coconut oil
  • 1/4 cup honey/syrup
  • 2 tablespoon balsamic vinegar
  • 2 tablespoon fresh rosemary + 1 tablespoon dried rosemary
  • salt and cracked black pepper to taste
  • Whole grain mustard (optional)
  • 1 tablespoon henderson's relish or lea perrins

Directions

    Wash fresh berries under cold running water. Finely slice onion. Heat 2 tablespoons of coconut oil in a pot.

    Caramelize onion on medium heat. Add thyme. Stir until soft then add jam.

    Gradually add berries in batches allowing it to soften and incorporate.

    Add honey/syrup, balsamic vinegar, lea perrins and chia seeds then cover and simmer for 20 minutes

    Stir and uncover cranking up the heat to high for 2 minutes. Add salt and pepper to taste while doing this

    Leave to cool in sanitized jar before storing in fridge.
