- 2 c. water
- 1 c. uncooked rice
- 6 large Vidalia onions
- 1/2 c. butter
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1 c. shredded Swiss cheese
- 1 c. whipping cream
- paprika
Directions

1Cook rice in water for 10 minutes.

2Drain and set aside.

3Peel and chop onions.

4Melt butter in skillet over medium heat; add onion and cook for 15 minutes stirring often.

5Remove from heat; stir in rice and next 4 ingredients.

6Spoon mixture into a lightly greased 13 x 9 x 2-inch baking dish.

7Cover and bake for 30 minutes.

8Sprinkle with paprika.
