- 2 c. water
- 1/2 c. cornstarch
- 1/3 c. cider vinegar
- 1 1/2 c. sugar
- 1 Tbsp. butter
- 1 1/2 tsp. lemon rind
- 3 egg yolks
Directions

1Mix water, cornstarch and vinegar.

2Bring to a boil for 3 minutes.

3Reduce heat and stir after it comes to a boil.

4Stir in sugar, butter, grated lemon rind and egg yolks.

5Pour into baked pie shell and cool. Beat 3 egg whites until stiff.

6Add 1/3 cup sugar and 1/4 teaspoon vinegar.
