- 2 1/2 c. light cream or coffee cream
- 1/4 c. unsalted butter
- 5 tsp. sugar
- 3/4 tsp. salt
- 1 c. stone-ground white cornmeal
- 4 eggs, separated
- 1 tsp. baking powder
- 1/4 tsp. white pepper
- 1/4 tsp. cream of tartar
Directions

1Combine cream, butter, sugar and salt in a saucepan.

2Heat until scalding, but do not boil.

3Remove from heat.

4Using a wooden spoon, beat in the cornmeal, stirring until the mixture is thick.

5Beat the egg yolks lightly with the baking powder and pepper.

6Stir a small dollop of the hot cornmeal mixture into the yolks to warm them, then stir the yolks into the hot cornmeal.
