- 2 c. milk
- 3/4 c. yellow cornmeal
- 1 tsp. salt
- 1 Tbsp. sugar
- 2 Tbsp. butter, melted
- 3 eggs, separated
- 2 tsp. baking powder
Directions

1Scald milk.

2Sift in cornmeal slowly while stirring and cook until thickened.

3Add salt, sugar, shortening and beaten egg yolks.

4When thoroughly blended, add the baking powder and fold in the stiffly beaten egg whites.

5Turn into a well-greased 1 1/2-quart baking dish and bake in hot oven (400°) for 20 to 25 minutes.

6Serve with a spoon from the dish in which it was cooked. Serves 6.
