Walnut and Tomato Slice

Ingredients

  • 100 g breadcrumbs (wholewheat)
  • 100 g walnuts, ground
  • 2 stalks celery, chopped
  • 50 g onions, peeled and finely chopped
  • 100 g carrots, grated
  • 12 red pepper, deseeded and chopped
  • 12 teaspoon thyme
  • 12 teaspoon sage
  • 1 egg (free-range)
  • 2 tablespoons tomato puree
  • black pepper (freshly ground)
  • 2 tomatoes, sliced thinly
  • 1 tablespoon sesame seeds

Directions

    Preheat the oven to 400F/200C/gs mark 6.

    Line a 2 lb loaf tin with foil.
  3. 3
    Mix together all the ingredients except the tomatoes and sesame seeds, season with pepper.

    Smooth the seeds on top and cover with foil.

    Bake in the centre of the oven for 35 minutes.

    Remove the foil and cook for a furher 5 minutes, uncovered.

    Remove from the oven, tip out of the tin and serve sliced, either hot or cold.
