Walnut Pumpkin Roll

Ingredients

  • 3 eggs
  • 2/3 c. canned pumpkin
  • 1 c. softasilk cake flour
  • 1 tsp. baking soda
  • 1 c. sugar
  • 2 tsp. cinnamon
  • 1 c. walnut pieces (optional)

Directions

    Beat eggs about 3 minutes.

    Add sugar and mix well.

    Then add remaining cake ingredients.

    Pour batter onto a jelly roll pan lined with foil, sprayed generously with cooking spray.

    If nuts are desired just sprinkle onto batter.

    Bake at 375° for 12-15 minutes.

    While cake is baking prepare a piece of waxed paper sprinkled with powdered sugar to turn the cake out on, roll cake up and set aside to cool.
