Walnut-Raisin Bread

Ingredients
- 2 c. all-purpose flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/2 c. butter or margarine, softened
- 3/4 c. sugar
- 1 egg
- 1/4 c. orange juice
- 1 (8 oz.) can crushed pineapple, undrained
- 1 c. raisins
- 1 c. chopped walnuts
Directions

1In a mixing bowl, combine flour, baking powder, baking soda and salt.

2Set aside.

3In another bowl, cream butter and sugar.

4Add egg and orange juice.

5Beat well.

6Add 1/3 cup of flour mixture. Beat until smooth.

7Mix in remaining flour mixture and the pineapple.

8Stir in raisins and walnuts.

9Pour into a greased 9 x 5 x 3-inch loaf pan.

10Bake at 350° for 60 to 70 minutes.

11Let cool in pan for 10 minutes.

12Remove to wire rack to cool completely. Yields 1 loaf.
