- 1 c. milk
- 1 c. bread crumbs
- 1 lb. can salmon
- 3 eggs, beaten
- 1/2 tsp. salt
- 1 tsp. lemon juice
- 1/2 c. heavy cream or sour cream
- 1 1/2 Tbsp. tarragon vinegar
- 1 cucumber
- dash of cayenne pepper
Directions

1Combine milk and crumbs and cook until texture is smooth. Flake salmon; remove skin and bones.

2Combine milk mixture, salmon, eggs, salt and lemon juice and pour into an oiled loaf pan (approximately 5 x 9-inch).

3Place filled loaf pan in a larger pan of hot water and bake at 350° for 1 hour.

4Unmold and serve with cucumber sauce.
