Ingredients

  • 1 c. milk
  • 1 c. bread crumbs
  • 1 lb. can salmon
  • 3 eggs, beaten
  • 1/2 tsp. salt
  • 1 tsp. lemon juice
  • 1/2 c. heavy cream or sour cream
  • 1 1/2 Tbsp. tarragon vinegar
  • 1 cucumber
  • dash of cayenne pepper

Directions

    Combine milk and crumbs and cook until texture is smooth. Flake salmon; remove skin and bones.

    Combine milk mixture, salmon, eggs, salt and lemon juice and pour into an oiled loaf pan (approximately 5 x 9-inch).

    Place filled loaf pan in a larger pan of hot water and bake at 350° for 1 hour.

    Unmold and serve with cucumber sauce.
