  • 8 Eggs
  • 3 tbsp minced green onions
  • 1/3 cup mayonnaise
  • 2 tsp wasabi paste (add less if its too spicy)
  • 2 tsp rice wine vinegar
  • 1 sea salt
  • 1 (optional) pickled ginger slices
  • 1 (optional) fresh pea shoots, for garnish
  • 1 paprika ( sprinkle lightly for added color)

    ), slice eggs in half length wise.

    Scoop out the yolk, and place in a mixing bowl.

    Mash egg yolks with a fork until smooth.

    Chop green onion measure out mayo, Wasabi paste, vinegar, place into mixing bowl with egg yolks, and mix well.

    Taste to measure the amount of salt to add.

    Sprinkle lightly with paprika, garnish with pea shoots, and ginger slices.
