  • 30 large fresh mint leaves, torn by hand
  • 4 thick slices fresh watermelon
  • 12 ounces light rum
  • 12 cup simple syrup
  • 6 tablespoons fresh squeezed lime juice
  • 1 sprig mint (to garnish)

Directions

    Use a mortar and pestle to smash mint leaves.

    Remove the rind and seeds from watermelon.

    Put fruit in a food processor fitted with the steel blade and puree.

    Put the mashed mint in a large pitcher with 2 cups of the watermelon puree, the rum, simple syrup, and lime juice.

    Stir to combine.

    Put ice cubes in glasses, pour mojito mixture over, and garnish with mint.
