- 4 pounds watermelon rind
- 2 quarts water cold
- 1 tablespoon limes
- 2 tablespoons allspice whole
- 2 tablespoons cloves whole
- 1 quart vinegar
- 1 quart water
- 3 1/2 pounds sugar
Directions

1Remove all pink pulp from rind and peel.

3Cut in 1-inch cubes.

4Combine cold water and lime; pour over rind.

5Let stand 1 hour.

6Drain.

7Cover with fresh cold water.

8Simmer 1 hour or until tender.

9Drain.

10Tie spices in cheesecloth.

11Combine vinegar, remaining water and sugar.

12Heat until sugar dissolves.

13Add spice bag and rind.

14Simmer gently 2 hours.

15Add green vegetable color to your taste.

16Pack rind in hot sterile jars.

17Fill with boiling hot syrup.

18Seal.
