- 1 qt. vinegar
- 4 c. brown sugar
- 1/2 oz. whole cloves
- 2 qt. watermelon rind pieces
- 5-inch piece stick cinnamon
- salt
Directions

1Remove green rind and trim off red.

2Cut into 2-inch pieces. Sprinkle with salt and let stand overnight.

3Rinse and steam until tender or nearly done.

4Drain.

5Combine remainder of ingredients and boil.

6Add rinds and boil until clear.

7Put rinds in jars. Boil syrup down thick before pouring over pieces.

8Seal.

9Red coloring may be added if desired.
