- 4 lb. watermelon rind
- 4 Tbsp. salt
- 1 tsp. dissolved alum
- water (to cover)
- 9 c. sugar
- 2 lemons, sliced thinly
- 4 cinnamon sticks
- 2 tsp. ginger
- 2 tsp. whole cloves
- 2 tsp. allspice
- 8 c. water
Directions

1Peel the green from rind. Cut into cubes. Soak rind in salted water with alum overnight.

2Drain. Cover with fresh water and bring to a boil.

3Remove from heat and drain.

4Mix sugar into 8 cups water and add remaining ingredients.

5Cook over low heat, stirring, until mixture becomes syrupy.

6Add rind and bring to a slow boil. Cook until rind is tender.

7Pack in jars and seal.

8Do water bath for 10 minutes.

9Makes 3 to 4 quarts.
