Watermelon Rind Pickles

Ingredients
- rind from 1 watermelon
- 4 Tbsp. coarse salt
- 3 qt. water (enough to cover rinds)
- 1 qt. white vinegar
- 1 qt. water
- 5 lb. sugar
- 4 or 5 cinnamon sticks
- 1 lemon, thinly sliced
Directions

1Peel rind and remove all pink.

2Cut in 1-inch squares.

3Soak 3 hours in salt and water.

4Rinse and drain and cook in enough water to cover until just tender.

5Make syrup of sugar, vinegar, water, lemon and cinnamon.

6Add rind and simmer until it looks clear. Pack in hot, sterile jars and seal.

7Makes 6 to 8 quarts.
