- 1/4 c. butter or margarine
- 25 strands vermicelli pasta
- 2 c. chicken broth
- 1 c. long grain white rice
- 1/2 c. slivered and blanched almonds, toasted
- 1/2 c. chopped dates
- 1/4 c. flaked coconut
Directions

1Melt butter in a medium saucepan.

2Crunch up vermicelli pasta into approximately 1-inch lengths.

3Saute pasta in butter until golden brown.

4Add chicken broth to butter and vermicelli.

5Bring to a boil.

6Add rice and cover; simmer for 10 minutes.

7Add toasted almonds, chopped dates and coconut to rice.

8Continue to simmer for 10 more minutes.

9Remove rice from stove.

10Let stand, covered, for 5 minutes.

11Fluff with a fork.

12Serve immediately.
