- 1 lb. ground chuck (made into small meatballs)
- 2 c. chicken broth or chicken stock
- 1 beaten egg
- 1/2 small box acini de pepe
- 2 chicken breasts, cooked and cut up
Directions

1Cook escarole or endive slightly.

2Heat chicken broth or stock.

3Add greens.

4Add celery, carrots and meatballs.

5Add cooked chicken.

6Spread beaten egg over top.

7Add acini de pepe macaroni.

8Simmer 3 to 4 hours.
