- 4 ounces honey
- 1 teaspoon cinnamon
- 4 ounces brown sugar
- 1 x eggs
- 1/2 pound flour, all-purpose
- 1/2 teaspoon baking soda
- 4 ounces butter or margarine
- 1 x sugar, superfine
Directions

1Sieve together flour, cinnamon and bicarbonate of soda.

2Cream butter and sugar.

3Seporate the egg yolk from the white.

4Beat the yolk into sugar and butter, then add the honey, gradually.

5Stir in the flour with a little milk as required and mix all together lightly.

6Whisk the egg white into a stiff froth and fold into mixture.

7Half fill small patty tins with the mixture; dredge the top of each with cester sugar.

8Bake in a hot oven for 20 minutes.

9When ready sprinkle a little more sugar.
