  • 2 ounces, weight Butter
  • 2 ounces, weight All-purpose Flour
  • 10 ounces, fluid Milk
  • 5 ounces, weight Grated Farmhouse Cheddar Cheese
  • 1 teaspoon Mustard
  • 3 dashes Worcestershire Sauce
  • Black Pepper
  • 4 slices Crusty/granary Bread
  • 1 Tablespoon Chopped Chives, To Garnish (optional)

    Melt butter in a pan.

    Stir in all-purpose flour and cook for two minutes.

    Gradually stir in milk to make a very thick, smooth sauce.

    Add grated cheese, stir until melted, then season with mustard, Worcestershire sauce and a few grinds of black pepper.

    Pile onto toast and grill (broil) until browned and bubbling.
