  • 4 slices bread
  • 4 tablespoons unsalted butter
  • 8 ounces cheddar cheese, grated
  • 14 cup ale, the stronger the better
  • 2 teaspoons English mustard
  • salt
  • pepper

Directions

    Toast the bread on both sides.

    Melt the butter in a heavy saucepan over a low heat.

    Add the cheese and ale, stirring constantly.

    Add mustard, and salt and pepper to taste.

    Spread on toast and grill or broil until browned and bubbling.
