- 4 tablespoons unsalted butter
- 8 ounces cheddar cheese, grated
- 14 cup ale, the stronger the better
- 2 teaspoons English mustard
- salt
- pepper
Directions

1Toast the bread on both sides.

2Melt the butter in a heavy saucepan over a low heat.

3Add the cheese and ale, stirring constantly.

4Add mustard, and salt and pepper to taste.

5Spread on toast and grill or broil until browned and bubbling.
