- 2 tablespoons butter
- 1 teaspoon good mustard
- Salt and pepper
- 1/4 cup beer or ale
- 4 ounces grated Cheddar or Double Gloucester cheese
- 2 thick slices grilled Italian bread
Directions

1Melt the butter in the saucepan and add the mustard, salt and pepper, ale or beer and bring to a simmer.

2Add the cheese and the minute it has melted remove the saucepan from the heat.

3Pour over the toast and serve as is or place under the broiler to brown.

4Serve immediately with a glass of red wine or beer.
