- 1 lb. dry navy beans
- 1 large onion, chopped
- 2 stalks celery, chopped
- 1 large clove garlic, chopped
- 2 Tbsp. olive oil
- 1 bay leaf
- 3 tsp. sugar
- 1/4 tsp. crushed red pepper
- 1 carrot, chopped
- 1 Tbsp. parsley flakes
- salt to taste
Directions

1Clean beans.

2Soak overnight.

3Drain off soaking water. Put in large pot all ingredients. Cover with water. Bring to a boil. Turn down

9To thicken, remove about 1 cup soup and mash by hand
