White Bean Soup With Spinach

Ingredients

  • 2 quarts chicken stock
  • 1 12 cups dried great northern beans
  • 14 cup pearl barley
  • 1 large onion, chopped
  • 13 cup sliced carrot
  • 13 cup sliced celery
  • 2 garlic cloves, minced
  • 2 bay leaves
  • 1 teaspoon dried marjoram
  • 1 teaspoon dried basil
  • 12 teaspoon dried thyme
  • 1 (14 ounce) can diced tomatoes
  • 10 ounces frozen spinach, thawed and drained
  • salt and pepper

Directions

    Combine all ingredients except tomatoes and spinach in slow cooker.

    Cover and cook on low 7-8 hours or until beans are tender.

    Add tomatoes and spinach during last 30 minutes.

    Discard bay leaf, season to taste with salt and pepper.
