Ingredients
- 1/4 cup olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 large tomatoes, chopped (optional)
- 1 medium carrot, peeled and diced
- 1 medium potato, peeled and diced
- 1 stalk celery, thinly sliced
- 1 cup chicken stock
- 2 (15 ounce) cans butter beans, drained (or any other white bean)
- 2 tablespoons lemon juice
- 1 tablespoon fresh parsley
- salt and pepper, to taste
Directions

1Heat the olive oil in a heavy bottomed saucepan.

2Lightly brown the onion and garlic.

3Add the tomato, carrot, potato and celery.

4Stir and saute for 3-4 minutes.

5Add the stock and simmer for 10 minutes.

6Add the beans, salt, pepper and lemon juice.

7Simmer for an additional 10 minutes or until veggies are tender and the stock is nearly gone.

8Remove from the heat.

9Stir in the parsley and serve.
