White Cheddar Mashed Potatoes

  • 5 pounds Potatoes
  • 1/2 cups Butter, Softened
  • 10 ounces, weight Shredded White Cheddar Cheese
  • 8 ounces, weight Cream Cheese, Softened
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1/3 cups Whipping Cream

    Peel, wash and cube potatoes. Add the into a pot of boiling water and cook until tender. Depending on the size of the cubes, this will take between 10 and 20 minutes. Drain well.

    Place the boiled and drained potatoes in a large bowl. Add butter, shredded cheese, cream cheese, salt and pepper. Mix well with an electric mixer until lumps are gone. Add whipping cream a little at a time until desired consistency is achieved. You might want to go a bit thinner than you normally would with mashed potatoes because as they cool to an edible temperature, the cheese thickens back up and makes the potatoes stiffer than usual.
