  • 1 lb. white beans, soaked overnight in water and drained
  • 6 c. chicken broth (may need more)
  • 2 medium onions, chopped (divided)
  • 2 (4 oz.) cans chopped green chilies
  • 4 c. diced, cooked chicken breasts
  • 2 cloves garlic, minced
  • 1 Tbsp. cumin (ground)
  • 1 1/2 tsp. dried oregano
  • 1/4 tsp. ground cloves
  • 1/4 tsp. cayenne pepper
  • 3 c. Monterey Jack cheese (12 oz.)
  • 1 Tbsp. oil

Directions

    Combine beans, chicken broth, garlic and half of the onions in a large soup pot.

    Bring to boil.

    Reduce heat and simmer until beans are soft, 3 hours or more.

    Add more chicken broth if needed.

    In a skillet, saute remaining onions in oil until tender. Add chilies and seasonings; mix thoroughly.

    Add to bean mixture. Add chicken and simmer 1 hour.

    Serve topped with grated cheese. Serve with cornbread.
