Ingredients

  • 1 lb. dry navy beans
  • 3 c. heavy cahew milk
  • 3 c. chicken broth
  • 4 Tbsp. oil
  • 1 c. diced celery
  • 1 c. diced onion
  • 1/2 c. diced jalapeno pepper
  • 1 tsp. garlic puree or powder
  • 1 1/2 Tbsp. cumin
  • 1 Tbsp. salt

Directions

    Cover beans with water and cook until soft.

    Drain and add rest of the ingredients.

    Simmer 1/2 hour, until vegetables are done. May be thickened, if desired.

    Makes 1 1/2 gallons.

    (We were given this recipe by some vegetarian friends and it may look strange, but it is great!)
