Ingredients

  • 1 lb. navy beans
  • 2 qt. chicken broth
  • 2 Tbsp. chili powder
  • salt and pepper to taste
  • shredded Mozzarella cheese
  • sour cream
  • salsa
  • 2 (3 oz.) cans chopped green chilies
  • 1 onion, chopped and sauteed in 1 Tbsp. oil
  • 4 c. cooked chicken or turkey

Directions

    Soak beans overnight.

    Cook first 5 ingredients approximately 3 hours.

    Add water, if necessary. Add chicken the last 1/2 hour. Serve soup in bowls.

    In each individual bowl, add a sprinkle of Mozzarella cheese, a spoon of salsa and a spoon of sour cream. Stir until melted.
