Ingredients

  • 1 tablespoon vegetable oil
  • 1 cup chopped onion
  • 2 garlic cloves, finely chopped
  • 3 cups chicken broth
  • 2 tablespoons chopped fresh cilantro or 12 teaspoon ground coriander
  • 2 tablespoons fresh squeezed lime juice
  • 1 teaspoon ground cumin
  • 12 teaspoon dried oregano
  • 14 teaspoon salt
  • 14 teaspoon red pepper sauce (Sarachi)
  • 3 (15 ounce) cans great northern beans
  • 2 cups cooked chicken breasts, chopped
  • sour cream
  • shredded monterey jack cheese

Directions

    Heat oil in 4 quart pot over medium heat.

    Cook onions and garlic, stirring occasionally, until onions are tender.

    Stir in remaining ingredients except for chicken.

    Bring to a boil and reduce heat.

    Simmer uncovered for 20 minutes.

    Stir in chicken and simmer until chicken is hot.

    Top with shredded montery jack cheese and a dollop of sour cream before serving.
