  • 2 Tbsp. olive oil, divided
  • 1 large onion, chopped
  • 2 ribs celery, diced
  • 1 c. sliced mushrooms
  • 2 cloves garlic, minced
  • 1 lb. ground turkey
  • 1 (16 oz.) can cannellini beans, drained and rinsed
  • 1 (11 oz.) can white corn, drained and rinsed
  • 1 (4 oz.) can chopped green chiles
  • 1 tsp. ground cumin
  • 1 tsp. ground oregano
  • 1/2 tsp. Tabasco or to taste
  • 1 c. reduced-fat sour cream
  • hot cooked rice
  • 1 c. (4 oz.) shredded Monterey Jack cheese
  • 2 Tbsp. chopped fresh cilantro

Directions

    In a large nonstick skillet or saucepan, heat 1 tablespoon oil and saute onion, celery, mushrooms and garlic for 5 minutes, stirring occasionally.

    Take care not to burn the vegetables. Remove vegetables and set aside.
