- 2 Tbsp. olive oil, divided
- 1 large onion, chopped
- 2 ribs celery, diced
- 1 c. sliced mushrooms
- 2 cloves garlic, minced
- 1 lb. ground turkey
- 1 (16 oz.) can cannellini beans, drained and rinsed
- 1 (11 oz.) can white corn, drained and rinsed
- 1 (4 oz.) can chopped green chiles
- 1 tsp. ground cumin
- 1 tsp. ground oregano
- 1/2 tsp. Tabasco or to taste
- 1 c. reduced-fat sour cream
- hot cooked rice
- 1 c. (4 oz.) shredded Monterey Jack cheese
- 2 Tbsp. chopped fresh cilantro
Directions

1In a large nonstick skillet or saucepan, heat 1 tablespoon oil and saute onion, celery, mushrooms and garlic for 5 minutes, stirring occasionally.

2Take care not to burn the vegetables. Remove vegetables and set aside.
