- 1 lb. white beans
- 6 c. chicken broth
- 2 cloves garlic, minced
- 1 onion, chopped
- 2 cans chopped green chillies
- 2 tsp. ground cumin
- 1 1/2 tsp. oregano
- 1/4 tsp. cayenne pepper
- 4 c. diced cooked chicken breast
Directions

1Combine beans, broth, garlic and onion.

2Cook until tender. You may need to add more liquid.

3Add chillies and spices to bean mixture.

4Add diced chicken and simmer at least 1 hour.

5Serve topped with grated cheese.

6Offer other garnishes such as sour cream, ripe olives, chopped tomatoes, tortilla chips, salsa and guacamole.

7Serve with wedge of crusty cornbread.
