  • 1 c. butter (2 sticks)
  • 2 c. sugar
  • 4 eggs, separated
  • 1 tsp. vanilla
  • 1/4 lb. white chocolate, melted over hot water
  • 2 1/2 c. cake flour
  • 1 tsp. baking powder
  • 1 c. buttermilk
  • 1 c. chopped pecans
  • 1 c. flaked coconut

Directions

    Cream together butter and sugar.

    Beat in egg yolks.

    Add vanilla and melted chocolate; mix well.

    Sift together cake flour and baking powder and add alternately to the creamed mixture with the buttermilk.

    Beat egg whites until stiff and fold into batter. Stir in nuts and coconut.

    Pour mixture into 3 well-greased 9-inch cake pans.

    Bake in 350° oven for 30 minutes or until cake tests done.
