- 8 oz. white chocolate
- 6 Tbsp. unsalted butter
- 3 egg yolks
- 1 c. heavy cream
- 3 egg whites
- 1/4 c. confectioners sugar
Directions

1Melt chocolate in double boiler, then beat in butter.

2One by one, beat in egg yolks.

3Whip the cream until stiff peaks form. Beat the egg whites until they form soft peaks.

4While beating, sprinkle in sugar.

5Scrape the chocolate down the side of the egg white bowl and delicately fold together.

6When almost blended, fold in the whipped cream.
