White Chocolate Mousse

  • 8 oz. white chocolate
  • 6 Tbsp. unsalted butter
  • 3 egg yolks
  • 1 c. heavy cream
  • 3 egg whites
  • 1/4 c. confectioners sugar

    Melt chocolate in double boiler, then beat in butter.

    One by one, beat in egg yolks.

    Whip the cream until stiff peaks form. Beat the egg whites until they form soft peaks.

    While beating, sprinkle in sugar.

    Scrape the chocolate down the side of the egg white bowl and delicately fold together.

    When almost blended, fold in the whipped cream.
