White Chocolate Mud Cake

  • 1 cup butter, chopped
  • 5 oz white chocolate, chopped
  • 2 1/4 cups granulated sugar
  • 1 cup milk
  • 1 2/3 cups all-purpose flour
  • 1/2 cup self-rising flour
  • 1 tsp vanilla extract
  • 2 None large eggs, beaten lightly
  • None None White Chocolate Ganache
  • 1/2 cup heavy cream
  • 10.5 oz white chocolate, chopped

Directions

    Preheat oven to 325°F. Grease a deep 8 inch round cake pan and line base and sides with parchment paper.

    Combine butter, chocolate, sugar and milk in a medium saucepan. Using a wooden spoon, stir over low heat, without boiling, until smooth. Transfer to a large bowl and let cool for 15 mins.

    Whisk in flour then vanilla and egg. Transfer to prepared pan. Cover loosely with foil and bake for 1 hour. Discard foil and let cake stand in pan for 10 mins. Transfer to a wire rack to cool completely.

    Meanwhile, to make the ganache, bring cream to a boil. Pour over chocolate in a small bowl. Let stand for 2-3 mins then stir until smooth. Cover bowl and refrigerate, stirring occasionally, for 30 mins, or until spreadable.

    Place cake on a serving plate. Spread ganache over cake then let stand until set. Serve.
