White Fruit Cake

- 1 lb. candied cherries (1/2 red, 1/2 green)
- 1 lb. candied pineapple
- 1 lb. shelled pecans
- 4 c. flour (all-purpose)
- 1 heaping tsp. baking powder
- 2 c. sugar
- 1 lb. butter
- 2 oz. lemon extract
- 8 eggs
- 1/2 tsp. salt
Directions

1Cream the butter, eggs, sugar and 1 cup flour.

2Use other flour to coat fruit. Add to mixture. Add nuts. Add flavoring last and bake at 275°.

3Cook with a pan of water under it. Takes about 3 hours to cook. Line your ungreased tube pan with 2 layers of brown paper.
