White Fruit Cake

- 1 pt. pecans
- 1/2 lb. pineapple (candied)
- 1/2 lb. cherries (candied)
- 1/2 lb. butter
- 2 c. sugar
- 2 c. regular flour (plain)
- 2 c. cake flour
- 1/2 c. coconut
- 1 tsp. vanilla
- 5 eggs
Directions

1Cream butter and sugar.

2Eggs should be added one at a time, beating slowly.

3Add to mixture the vanilla and 2 cups cake flour (sifted).

4In a separate bowl mix pecans, diced cherries and pineapple with 2 cups of regular flour.

5When well mixed, pour into other mixture.

6Add coconut and stir until well mixed.

7Pour into two loaf pans and cook at 250° for 2 hours with pan of water underneath.

8Take water out and cook 30 minutes longer.
