  • 1 pt. pecans
  • 1/2 lb. pineapple (candied)
  • 1/2 lb. cherries (candied)
  • 1/2 lb. butter
  • 2 c. sugar
  • 2 c. regular flour (plain)
  • 2 c. cake flour
  • 1/2 c. coconut
  • 1 tsp. vanilla
  • 5 eggs

    Cream butter and sugar.

    Eggs should be added one at a time, beating slowly.

    Add to mixture the vanilla and 2 cups cake flour (sifted).

    In a separate bowl mix pecans, diced cherries and pineapple with 2 cups of regular flour.

    When well mixed, pour into other mixture.

    Add coconut and stir until well mixed.

    Pour into two loaf pans and cook at 250° for 2 hours with pan of water underneath.

    Take water out and cook 30 minutes longer.
