  • 1 c. butter
  • 2 c. sugar
  • 1 c. sweet milk
  • 3 1/2 c. flour
  • whites of 7 eggs
  • 2 even tsp. baking powder
  • 1 lb. white raisins
  • 1 lb. figs
  • 1 c. any kind nuts
  • 1/2 lb. citron
  • 1 c. coconut
  • 1 pkg. candied cherries
  • 1 chopped apple
  • 1 c. candied pineapple
  • 1 tsp. lemon extract

Directions

    Dredge fruit and nuts with flour.

    Sift together flour and baking powder; set aside.

    Cream butter and sugar together; set aside.

    Beat egg whites until stiff peaks form.

    Add dry mixture, creamed mixture, egg whites and milk together, mixing thoroughly; add lemon extract.

    Fold in fruit and mix well.

    Bake in a 350° oven for 1 hour, then reduce oven to 325° and bake for 1 1/2 hours.

    This can be baked in a loaf pan or 2 small pans.
